Ingredients
1 medium cucumber, sliced with the skin on
2 large heirloom tomatoes, cut into large chunks (see note)
1 yellow bell pepper, stem and seeds removed, thinly sliced
1/2 red onion, thinly sliced
1/2 cup pitted kalamata olives
1 4oz block of feta cheese
1/4 cup extra virgin olive oil
2 tbsp freshly squeezed lemon juice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano
Directions
- In a large shallow bowl, arrange the cucumber slices on the bottom of the bowl, forming an even layer (cucumbers can overlap).
- Next, layer tomatoes, bell pepper, and top with red onion.
- Add kalamata olives.
- Using a sharp knife, cut block of feta in half lengthwise forming 2 thin rectangles. Cut each rectangle across diagonally forming 4 triangles. Arrange triangles on top of salad.
- Add olive oil, lemon juice, salt, pepper, oregano.
- Mix and serve.
Note
I like to cute my tomatoes into 4ths or 8ths lengthwise, and cut each piece in half crosswise.
