Greek Village Salad (Horiatiki Salata)

Ingredients

1 medium cucumber, sliced with the skin on

2 large heirloom tomatoes, cut into large chunks (see note)

1 yellow bell pepper, stem and seeds removed, thinly sliced

1/2 red onion, thinly sliced

1/2 cup pitted kalamata olives

1 4oz block of feta cheese

1/4 cup extra virgin olive oil

2 tbsp freshly squeezed lemon juice

1/2 tsp salt

1/4 tsp pepper

1/4 tsp oregano

Directions

  1. In a large shallow bowl, arrange the cucumber slices on the bottom of the bowl, forming an even layer (cucumbers can overlap).
  2. Next, layer tomatoes,  bell pepper, and top with red onion.
  3. Add kalamata olives.
  4. Using a sharp knife, cut block of feta in half lengthwise forming 2 thin rectangles. Cut each rectangle across diagonally forming 4 triangles. Arrange triangles on top of salad.
  5. Add olive oil, lemon juice, salt, pepper, oregano.
  6. Mix and serve.

Note

I like to cute my tomatoes into 4ths or 8ths lengthwise, and cut each piece in half crosswise.
