Vegan GF Banana Bread

Ingredients

1/4 cup ground flaxseeds

2 overripe bananas

1/4 cup natural peanut butter (or other nut butter of choice)

1/2 cup pure maple syrup

1/4 cup melted coconut oil

1 tbsp vanilla extract

2 1/2 cups almond flour

1/4 oat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup dark chocolate chips

1/2 cup roughly chopped walnuts (optional)

Directions

  1. Preheat oven to 350 F.
  2. Line a loaf pan with parchment paper.
  3. In a small mixing bowl, combine ground flax seeds with 1/4 cup water. Set aside to thicken.
  4. In a medium mixing bowl, mash bananas with a fork until they become a puree consistency.
  5. Add peanut butter, maple syrup, melted coconut oil, vanilla extract, and flax mixture to mashed bananas. Mix until fully combined.
  6. In a separate medium mixing bowl, combine almond flour, oat flour, baking powder, baking soda, and salt.
  7. Slowly add dry ingredients into wet ingredients, stirring constantly until fully combined.
  8. Fold in chocolate chips and walnuts until evenly distributed.
  9. Bake for 50 minutes, or until loaf is lightly browned.

Note

If desired, top with chocolate chips, walnuts, or a banana cut in half lengthwise, get creative!
