Ingredients
1/4 cup ground flaxseeds
2 overripe bananas
1/4 cup natural peanut butter (or other nut butter of choice)
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1 tbsp vanilla extract
2 1/2 cups almond flour
1/4 oat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup dark chocolate chips
1/2 cup roughly chopped walnuts (optional)
Directions
- Preheat oven to 350 F.
- Line a loaf pan with parchment paper.
- In a small mixing bowl, combine ground flax seeds with 1/4 cup water. Set aside to thicken.
- In a medium mixing bowl, mash bananas with a fork until they become a puree consistency.
- Add peanut butter, maple syrup, melted coconut oil, vanilla extract, and flax mixture to mashed bananas. Mix until fully combined.
- In a separate medium mixing bowl, combine almond flour, oat flour, baking powder, baking soda, and salt.
- Slowly add dry ingredients into wet ingredients, stirring constantly until fully combined.
- Fold in chocolate chips and walnuts until evenly distributed.
- Bake for 50 minutes, or until loaf is lightly browned.
Note
If desired, top with chocolate chips, walnuts, or a banana cut in half lengthwise, get creative!
